    Grape varieties : Malbec. Vineyard Surface : 0.58 hectare. Density : 4500 vines/Ha.

    Origin of the grapes: A single plot located at an altitude of 350 m on the Causse, at a place called Peyres Levades in Cournou. As its Occitan name suggests, the "Pierres Levées" takes its name directly from its terroir, it is moreover the most calcareous plot of the estate.

    Average age of the vines: 50 yo. Yields: 20-25 hl/ha.

    Certification : Organic (Ecocert). Number of bottles produced: only 2000 bt per year.

    Vinification & ageing: Vinification in a conical trunk with light pumping over, maceration for around 30 days and maturing for 16 months also in a conical trunk.

    Family property of 23 hectares, 22 ha of Côt (aka Malbec) and 1 ha of Rolle (aka Vermentino), located 17 km from Cahors on the Causse Limestone, Combel-la-Serre was created at the instigation of Jean-Pierre ILBERT who decided to leave the local cooperative in 1998 to become independent. His son, Julien, returned to the property in 2003 and works today with Sophie, his wife. Little by little, the couple gives a second wind to the estate: conversion to organic farming (via Ecocert), return to manual harvesting throughout the vineyard with sorting at harvest, work on the different terroirs while respecting nature, reflection on the consistency of the range of wines offered by the domain.
