    Grape Variety: 90% Syrah, 10% Grenache.

    Tasting notes : On the nose a gentle attack of cedar highlighting the classic notes of an elegant Syrah with herbal nuances of garrigue.  In the mouth it is medium bodied with layers of complexity and open texture with hints of soft tannins on the finish.

    Certified organic wine and vegan friendly. Hand picked. Hand harvesting at optimum ripeness - One third of whole bunches, two thirds de-stemmed without crushing - Natural fermentation - Light pumpovers and punchdowns during 4 weeks maceration.
     
    Ageing: In 2000 litre oak barrel during 20 months without racking of the lees - Bottling with no fining or filtration. 12 months further ageing in bottle before release.
     
    The wine is named “Villa Mon Rêve” after a little stone cottage situated on our vineyards in La Livinière (Minervois). Many years ago the previous owner built the cottage for his ailing wife so they could spend what they thought were their last years in this idyllic setting, surrounded by beautiful vineyards. A dream came true when his wife made a miraculous recovery and hence the cottage became “Villa Mon Rève” (the house of my dream). This incredible story behind the name inspired this wine.

    Our family owned winery is situated in the foothills of the Pyrenees, surrounded by its organic vineyards.

    Domaine Gayda has created a unique destination in the heart of the Languedoc, 25km south west of Carcassonne, in the village of Brugairolles.

    All our vineyards are treated with the upmost respect for our natural environment. Biodiversity is at the forefront of our vineyard management, bringing back a balanced ecosystem which is essential for sustainable production.

    Using the incredible variety of the many vineyard “terroirs”, our range of wines show off the very best of our winemaking skills using the “nothing added, nothing taken away” philosophy that minimises unnecessary intervention in the process.
