100% Pinot Noir from 2 parcels of vines; one planted in 1982, the older one in the 1940s. The bedrock is ever present and fissures allow the roots to penetrate down deep. On a gentle slope, the vines face the rising sun.
Vibrant ruby red in colour, the nose is very complex, black fruit nuances with a mineral touch. Full in the mouth, velvet smooth with a hint of salt on a sturdy structure.
This vineyard is adjacent to Grand Crus, and likewise it requires time and patience to discover and appreciate.
For a true expression of this terroir, yields must be restricted, rigorous fruit selection needed, and the vintage be allowed to weave its magic without undue interference. After a cold soak for 6 days at 8°C, wild yeast are allowed to develop and ferment the wine. Cap-punching and running over of the juice according to the year, with a relatively long vat time, around 20 days, and a maximum temperature of 30°C.
Oak from the Tronçais forest is perfect for maturing this wine, around 18 months.
