100% Pinot Noir. Maturation of minimum 2 to 3 years. Dosage between 5 and 7 g of sugar per litre (Brut).
This Champagne Blanc de Noirs is given its name (Eye of the Partridge) because of its amber colouring. It is naturally obtained when the Pinot Noir is pressed and remains throughout the winemaking process. Powerful nose of white peach and pastry, on the palate it is medium to full-bodied, fleshy and precise, with a pretty core of fruit, lively acids and a pillowy mousse. Ideal for diner, pair it with fish and poultry, terrines, cold cuts, soft ripened cheeses.
