Wine made from 100% Syrah grown organically and biodynamically on our estates in the Penedès. Wine made with biodynamic grapes and minimal intervention in the cellar. Wine suitable for vegans.
Harvested by hand and in small crates to avoid oxidation of the grapes. Arrival at the winery where it undergoes a short maceration of 6 hours at low temperature. Fermentation at 16ºC in stainless steel vats for 5 weeks.
Intense cherry colour, with blue rim and very bright.
Aromatic explosion on the nose, with a multitude of intertwined red and black fruits (blackberries, cherries, plums, strawberries) and hints of jam.
Powerful entry on the palate, where it develops again the aromas described above. Ample, meaty, tasty and with very balanced acidity. It has a smooth and pleasant finish, with a long persistence.
A biodynamically grown wine made exclusively from the Syrah variety, which we allow to reach its optimum point of maturity in order to extract its full aromatic potential.

Parés Baltà is a family owned winery in Penedes, Catalunya, whose origins go back to 1790. They practice organic farming since 1790 and biodynamic farming since 2012. The winery is managed by Joan and Josep Cusiné, with their wives and winemakers Maria Elena and Marta. Their efforts are reflected in the quality of their wines, showing fine character and concentration.
