100% Syrah. Organic and Biodynamic farming. 15 years old vines planted on 2 hectares schist soils.
Manual harvest. Whole berries put into vats by conveyor belt. 20% whole bunches (with stalks) are added. Extraction mainly by punching down and pumping over at the end of fermentation. Post-fermentation maceration for 20 to 30 days. Aged 18 months in 500L barrels (20% new) and stoneware jars.
A collectible winewine that evokes the Rhone valley but with an unparalleled personal tone. Deep, full, decisive sip, impossible to forget. On the attack the tannic grip is strong but sensibly elegant. It is spicy, leathery, with more balsamic and fruity notes well fused in the structure. In the days following the opening, there is no sign of slowing down, the wine still improves by returning gust of coriander and black pepper. Cheers!
